From all my years as a natural health writer, I’ve managed to collect literally thousands of tasty, easy-to-prepare, and healthy recipes… recipes that aging boomers can (and should) eat and enjoy.
Today I’m going to start sharing some of these delicious, life-building concoctions.
With that said, the first Aging Boomer Special Recipe is for…
HEALTHY VEGGIE AND APPLE COLE SLAW
1 large Granny Smith apple (or apple of choice) peeled, diced
Fresh lemon juice — drizzle over apple
1-2 zucchini, grated
Red cabbage, sliced thin and cut to bite size pieces
1-2 carrots, peeled and grated
Bean sprouts, cut to bite size pieces
Few pinches of ground nutmeg and ginger
Organic sunflower seeds (optional)
Mix above ingredients in bowl and toss with the following dressing:
1 Tbs coconut oil
1 Tbs apple cider vinegar
1/2 cup or more apple juice,
Optional: few drizzles of olive oil (vary the amounts according to taste)
After serving, store any left over slaw (there won’t be much, believe me) in your refrigerator in a tightly covered container. It will keep for a few days. The above amount yields about three cups.
As an aside, for me, this recipe makes a perfect dinner. I can sock away three cups of a great salad/slaw like this without batting an eye.
